Ingredients of Chouquette

I love that Rachel Khoo uses chocolate chips to decorate the chouquettes, which I think is a lovely alternative to the pearl sugar which is more commonly sold by the French bakeries. Pearl sugar is a popular ingredient used in many baking recipes in Europe. When I'm in Paris, I'll often pop into a boulangerie in the afternoon to pick up some chouquettes. Chouquettes are traditionally topped with pearl sugar, which are essentially small chunks of sugar.

Chouquette instructions

  1. Prechauffer le four a 200 degres. Bouillir les 25 cl d'eau avec le beurre et la pincée de sel..
  2. Hors du feu ajoutez la farine et remuer énergiquement..
  3. Remettre sur le feu pour dessècher la pâte..
  4. Retirer du feu.
  5. Ajoutez les oeuf un par un en battant énergiquement en chaque oeuf..
  6. Mettre la pâte dans une poche à douille. Faire des petite boule sur du papier cuisson. Aplatir un tout petit peu avec le dos d'une cuillère.
  7. Dorer avec le jaune d'oeuf mélanger à un peu de lait et ajoutez les perles de sucre.
  8. Enfourner 20 min à 200 degrés puis 5 min à 170 degrés.
